Simple Cinnamon Butternut Squash

Today I’m making butternut squash and the seeds! This is a whole 30 compliant side dish that you could serve at a holiday dinner or just for an every day meal. I probably cook this once a week or so. You could substitute carrots or sweet potato and it is just as amazing! You don’t get the seeds as a bonus, but it works well if you don’t want to worry about the seeds. 🙂

Healthy Easter Treats for Kids COLLAB: Almond Coconut Chocolates

Filling
1/4 cup almond butter
1 cup unsweetened shredded coconut
1/2 cup maple syrup

Chocolate
2 bakers chocolate bars, chopped
Microwave in 30 second increments then stir, 3 times. (Total 1.5 minutes)
Add 1 1/2 teaspoons stevia powder (or to taste)

Pour about a tablespoon of the chocolate into each of the molds and swirl it around. Place a flattened scoop of the filling in each. Cover with drizzled chocolate. Refrigerate 1 hour. Serve with whatever kind of milk you like! Yum!

Note: I tried melting the chocolate in a double boiler on the stove and it seized and hardened and was unusable! If you are 100% anti-microwave go for the double boiler method and good luck to you. I, however, am ok with using the microwave on special occasions…like melting chocolate. 😉

Soaked Almond Butter Recipe

Today we’re learning how to make soaked almond butter! I hope you like this recipe / tutorial. It has a few steps, but is worth it, because it’s absolutely delicious and the soaking step makes the nutrients easier and more available for your body to absorb! RECIPE:
2 Cups raw almonds
4 Cups water
1 Tablespoon salt

Let sit on the counter overnight. Drain and Rinse. Dehydrate in oven at lowest heat, or in a dehydrator for 12-24 hours (the longer the better to blend easily). Blend in high speed blender until smooth. YUM!

Recipe: How to Make a Basic Quick Homemade Spaghetti Sauce From Scratch With Simple Ingredients

Hey everybody! I’d like to start posting more recipe videos! This is a basic recipe for spaghetti or marinara sauce. I am by no means a pro chef, but I enjoy cooking and think that it doesn’t need to be so strict or scary. Julia Child is my inspiration. I usually don’t measure things, but when I create videos I will try to put measurements in for y’all for reference. Feel free to adjust to your taste! Thanks for watching!

2 Cups Tomato Sauce
1 Teaspoon Onion
1 Teaspoon Salt
1 Teaspoon Oregano
1/2 Teaspoon Parsley
1/2 Teaspoon Chili
1/2 Teaspoon Pepper
1/2 Teaspoon Basil
1/2 Tablespoon Garlic

Stir. Bring to a Boil over high heat. Reduce to low. Simmer 10 minutes. Enjoy!

Favorite Sauces {Paleo/Dairy-Free/Whole30}

Ranch Dressing

 

1 cup light tasting olive oil

1 egg

2 tablespoons white wine vinegar (or vinegar of choice)

1 tablespoon lemon juice

1 tsp salt

1/2 tsp pepper

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 cup cashew milk (or what milk you prefer)

1/4 cup fresh parsley

Blend with immersion blender. (I have this one: http://amzn.to/2jy2aYw)

Chimichurri sauce:

1 bunch cilantro (I saved a little for guacamole)

1 bunch parsley (I saved a little for garnishes)

1 garlic clove, pressed

2 tablespoons chopped onion

1/4 cup white wine vinegar

1/4 cup lime juice

1 1/2 cup olive oil

1tsp salt

1/2 tsp pepper

Pinch of red pepper flakes -optional

Add all ingredients to blender or food processor.  Add oil as you blend so that it emulsifies.  Refrigerate up to 3 days.  Freezing remaining sauce in an ice cube tray and then transfer to a freezer bag for future use.
