GRAIN-FREE (Paleo / Vegan) GRANOLA


Today we’re making grain-free granola! Here’s the recipe:

Preheat oven to 375F

1 Cup Walnut pieces
1 Cup Sunflower seeds
1 Cup Almond slivers
1 Cup Cashew pieces
(Or 4 cups total of your favorite nuts and seeds)
1/4 Cup Maple Syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon grated nutmeg
(Or 1 teaspoon of a similar spice mix)

Mix Ingredients. Bake 10 minutes. Stir. Bake another 5 minutes. Allow to cool completely. Store in an air tight container for up to a week -if it lasts that long.

Serve as a cereal with cashew milk, coconut milk, or other milk of choice. It also tastes amazing with fresh or dried fruit or an extra drizzle of almond butter or maple syrup if you’re really looking for a sweet treat. 🙂

Simple Cinnamon Butternut Squash

Today I’m making butternut squash and the seeds! This is a whole 30 compliant side dish that you could serve at a holiday dinner or just for an every day meal. I probably cook this once a week or so. You could substitute carrots or sweet potato and it is just as amazing! You don’t get the seeds as a bonus, but it works well if you don’t want to worry about the seeds. 🙂

Soaked Almond Butter Recipe

Today we’re learning how to make soaked almond butter! I hope you like this recipe / tutorial. It has a few steps, but is worth it, because it’s absolutely delicious and the soaking step makes the nutrients easier and more available for your body to absorb! For nut butters I use the twister jar (I have the regular size, not the mini): http://amzn.to/2nieBeP

RECIPE:
2 Cups raw almonds
4 Cups water
1 Tablespoon salt

Let sit on the counter overnight. Drain and Rinse. Dehydrate in oven at lowest heat, or in a dehydrator for 12-24 hours (the longer the better to blend easily). Blend in high speed blender until smooth. YUM!
