CARROT CAKE OATMEAL RECIPE:
I would call this about 4-6 servings. Feel free to divide or multiply the recipe as needed. = )
INGREDIENTS:
4 1/2 Cups Water
2 Cups Oatmeal
1/2 Cup Raisens
1 Cup Shredded Carrot
1 Cup chopped Apple
1/4 Cup pumpkin seeds
1/4 Cup sunflower seeds
2 Tablespoons Coconut oil
1 Tablespoon Vanilla extract
1/2 teaspoon pink salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground clove
1/2 teaspoon ground nutmeg
INSTRUCTIONS
Place ingredients in pot. Stir. Bring to boil. Set to low with lid on for 10 minutes. Remove from heat and let sit 5 minutes. Serve with sliced banana and/or drizzled with raw honey or pure maple syrup.
OPTIONAL
Sometimes we add 1/2 cup sucanat/rapadura (unrefined sugar) or coconut sugar with the other ingredients instead of using honey or syrup.
I like my oatmeal a bit “al dente”, if you like yours mushy add a little extra water (1/4 cup at a time) and cook until desired consistency is reached (perhaps 5 minutes longer). 🙂
Walnuts or pecans can be used instead of the seeds if you want this to be more traditional to Carrot Cake. Use what you have on hand. I don’t suggest almonds or anything else with a skin (the skins come off while cooking and are an unpleasant texture in my opinion), unless you’re using sliced or slivered almonds where the skins have been removed.
