It is possible to make this recipe in a food processor or blender, but you have to drip the oil in drop by drop to get it to mix properly. I don’t suggest trying it, unless you have the patience of a Saint. I do not. 😉 This is the immersion blender I have https://amzn.to/2Yj9BWd
Ingredients:
1 Cup Light Tasting Olive Oil (Extra Virgin will have a STRONG flavor- not recommended)
1 Tablespoon Organic Raw Apple Cider Vinegar (Or Lemon Juice)
1 Large Egg
1/2 teaspoon salt
1/2 Tablespoon Yellow Mustard
Place all ingredients in the immersion blender beaker (https://amzn.to/2Yj9BWd). Place immersion blender at the bottom of the beaker and turn on. Pull up on the immersion blender only after the mayo is almost completely mixed. Mix in remaining bit of oil on the top and transfer to a jar. Let sit for 1-2 hours on the counter and then refrigerate for up to one week.
This recipe contains raw eggs. Use good discretion when choosing eggs. I choose to use organic and pasture-raised eggs when possible. Wash your egg before cracking, etc. You may want to use pasteurized eggs if you are concerned about salmonella.
